Almond milk Bircher Museli With Honey Labne
Bircher muesli is a great way to start your day. Full of fibre to keep you full until lunch and skin boosting goodness. Fibre acts like a brush for our insides so keeping or bowels on track as well keeping our tummies happy and healthy. Oats provide us with silica that helps to maintain skin elasticity while dates are a rich source of fibre, potassium and vitamin A, C, K and B. Chia seeds and linseeds are rich in omega-3's which help moisturise the skin and keep hormones in balance.
If you don't feel like making the honey labne, keep it simple, just a small spoonful of coconut yogurt is just as amazing. Feel free to play around and add more apple, kiwifruit or my favourite blueberries. Its always good to eat the rainbow!!
I500ml almond milk
100g rolled oats
20g desiccated coconut
1 tbsp chia seeds
1 tbsp sunflower seeds
2 dates, finely chopped
1tsp vanilla-bean paste
1 grated green apple
Combine all ingredients. Cover and refrigerate overnight. Serve the Bircher muesli dolloped with a little honey labne, watermelon and mint leaves.
500g coconut yoghurt (may also use almond yogurt or sheep's)
50g honey, or to taste
Stir the yoghurt and honey to taste in a bowl to combine, then tip into a muslin-lined sieve over a bowl to drain overnight (discard the liquid).
